Introduction to Culinary Arts

Introduction to Culinary Arts and Hospitality allows students to build basic culinary arts knowledge and skills.

DC Principles of Culinary and Hospitality

Principles of Culinary and Hospitality is designed to develop an understanding of the hospitality industry and career opportunities, and responsibilities in the food service and lodging industry.  Students who take this course may 

apply to Ivy Tech, be accepted and register for dual credit. Tuition and fees may apply.

•Credits: 2 semester course, 2 semesters required, 1 credit per semester, 2 credits maximum

•Dual Credit: Yes; Institution: Ivy Tech; Credits Offered: 5 Prerequisites: GPA of 2.6 or Reading/Writing test


Nutrition

Nutrition students will learn the characteristics, functions and food sources of the major nutrient groups and how to maximize nutrient retention in food preparation and storage.  Students who take this course may apply to Ivy Tech, be accepted and register for dual credit. DC Culinary Arts

Culinary Arts teaches students how to prepare the four major stocks, the five mother sauces (in addition to smaller sauces) and various soups. Additional emphasis is placed on the further development of the classical cooking methods.  Students who take this course may apply to Ivy Tech, be accepted and register for dual credit. Tuition and fees may apply.

•Credits: 2 semester course, 2 semesters required, 1 credit per semester, 2 credits maximum

•Counts as a directed elective or elective for all diplomas

•Dual Credit: Yes; Institution: Ivy Tech; Credits Offered: 6  Prerequisites: Must earn previous dual credit courses (C or better)


DC Culinary Arts Capstone OR Baking and Pastry Capstone

Students will choose either Culinary or Baking Capstone course to dive deeper into these specific skills.  Students will be working independently on various techniques.  Students must have instructor approval to enroll.
